Chai Tea Cookies


Is this a shot for a scrapbook page or what? And that's just where it will end up after the holidays, turned into a scrapbook page, to preserve for years to come! Dominik had more fun eating the cookies, all boy he is! Speaking of cookies, I found a yummy recipe for Christmas cookies using Chai Tea, so since it's a favorite of mine and many of you, thought I'd share it with you today. It came from a magazine, a page I had torn out before giving the magazine away so I can't give credit where credit is due but they sure do look good!

Chai Spice Cookies
2 chai teabags
3 c. all purpose flour
2 tsp. pumpkin spice
1 1/2 c. butter, softened
1 c. sugar
2 egg yolks
2 Tbsp. molasses

Remove tea from bags and discard. In med. bowl combine tea, flour and pumpkin spice, set aside. In large mixing bowl beat butter on med. to high speed for 30 seconds. Add sugar beat till light and fluffy. Beat in egg yolks and molasses. Beat in as much of the flour as you can, stir in remaining flour. Divide dough in half, cover and refrigerate 3 hours or till easy to handle. Preheat oven to 350. Grease cookie sheet. Roll half of the dough to at a time to 1/4 thickness. Cut dough with cutters and bake for 12 min. to till edges are lightly browned. Cool. Decorate with icing or leave plain. Enjoy!
