Stuffed, not yet!


With only one more week to go with my month of Thanksgiving, I'm finding it so easy to find daily gratitude moments, and when I spotted this cute sign on the half off rack, I had to have it. It sums it up doesn't it, stuffed with gratitude is alot better than being stuffed with food, at least this way, you won't get that icky feeling in your gut but you will get a happy heart! Now, I'm not one to neglect the stomach, it needs fed too, so here's a yummy muffin recipe just in time for the weekend.

Coffee Cake Muffins
2 1/2 c. all purpose flour, divided
1/2 c. light brown sugar, packed
1 1/2 tsp. cinnamon, divided
14 Tbsp. butter, cut into pieces and divided
1 Tbsp. baking powder
1/2 tsp salt
3/4 c. sugar
2 lg. eggs
3/4 c. milk
1/2 tsp. vanilla
Preheat oven to 350. Line a muffin pan with paper cups. Combine 1/2 c. flour, light brown sugar and 1/2 tsp. cinnamon in a small bowl. Cut in 4 Tbsp. butter with a pastry blender or fork till crumbly. Set aside. Sift together remaining 2 cups flour, remaining cinnamon, baking powder and salt in med. bowl. Mix sugar and remaining 10 Tbsp. butter in a separate bowl at medium speed till well blended. Beat eggs into butter mixture till blended. Add flour mixture and milk till smooth,add vanilla and mix well. Divide batter evenly among cups filling each three quarters full. Sprinkle with reserved streusel topping. Bake for 20-30 min. till toothpick comes out clean. Cool 10 min.

Today's thankful moment is for a warm home and today it was treasured as the temp. only got to the mid 30's. Running errands were cut short due to the cold, I couldn't wait to get home and warm, causing me to acknowledge how much I'm grateful for a warm home, I don't always like the heating bills but till I can figure a way to add a woodstove somewhere, I'm thankful for the heat source we have. This house is near perfect, except for the fact that it doesn't have a fireplace or woodstove, but give me time....Happy Weekend!

  3. Stush has a wood stove down in the basement and wants to bring it up here in the livingroom and put it in the fireplace...I keep saying no...but with the price of utilities this year I just wonder if I should let him.

  4. That sure is a yummy recipe! We may go back to wood heat also. We heat with LP now, just have to see where the prices go. Two woodstoves are waiting and ready! Returning to a warm home on a cold day is a blessing. But, our temps are still near 70 daytime. Hoping for a cold spell this weekend.

  5. I love a warm home to come home too as well..We do have a woodstove and it is all we use..won't turn on the electric heat...just don't like it..but would certainly use if we had too...the kittys sure enjoy it...have a wonderful thanksgiving...;>)
