Rebound and Rejoice


Another Sunday and what a difference a day makes! It's in the low 50's, sunny and just a little wind, so much better than yesterday! Happy to report, my youngest son got a deer last night, a 5 point but it's meat in the freezer for him, even if he's still single, but not for long, we hope! Thanks for the comments left, as hard as it is to get those ends to meet now a days, extra meat is always welcomed.

I've been planning the Thanksgiving Day menu as I'm sure most of you are too, but I'm hoping to try some new recipes this year, you know, a new house deserves some new traditions and dishes. The old favorites will probably still be served or saved for another time. I've been going to the library and checking out their Christmas cookbooks and finding some contenders that look to be a 10 on the old yum factor. We will be hosting Thanksgiving here so I want to make it extra special. Here's a quick and easy one that I wanted to share with you, it comes from "The Ultimate Cookie Collection" from Taste of Home so you know it has to be good.

Peanut Butter Cookie Cups
1 package (17-1/2 oz) peanut butter cookie mix
36 miniature peanut butter cups, unwrapped
Prepare cookie mix according to package. Roll the dough in 1 in. balls. Place in greased mini muffin cups. Press dough evenly onto bottom and up sides of each cup. Bake at 350 for 11-13 min. or till set. Immediately place a peanut butter cup in each cup, press down gently. Cool for 10 min., carefully remove from pan. Makes 3 dz.

Today, I'm grateful for a warmer day, a sunnier day and that the boys were all safe while hunting. We tend to take the weather for granted till it turns against us, but that is something that we can not change, just accept it and try to live in it the best we can. Not always fun, like yesterday for me, but it sure does make me thankful for the rebound today! Happy Sunday!

  3. Morning Sue! I am loving this cool weather! We have a thick layer of frost this morning. I hope it stays cool and doesn't get warm again. I think the sudden change is what makes people get sick. And the summer here is soooooooo long and horrid. I'm always glad to see it go away!

  4. Its 70 here and loving it, glad Tyler got a deer, poor little thing. That recipe from Rosemamry is in her Sept 22 post. I have make it twice now and the last time was better then the 1st. Have a great week. Love and Miss you. Oh SHilas cooking so we will be there.
