Feast or Famine?
The back side of fall is here today, after a cold rain and high winds, alot of the trees are becoming bare and bleak looking. Winter is nearing. I caught this tree just the other day, today it is naked. Seasons change just as we do.
Something that doesn't change much is my love of cooking and baking and since today is grey and dreary, homemade soup is on the menu for tonight, potato I think. But have you ever made breakfast for dinner? I used to do this alot when the kids were little but I still do it now and then for us. I found this recipe for Gingerbread Pancakes that I had to share since I found my gingerbread spice tea the other day, what a combo meal!
Gingerbread Pancakes
1 c. all purpose flour
2 Tbsp. sugar
2 tsp. baking powder
1/2 tsp. cinnamon
1/4 tsp. ginger
1/4 tsp. allspice
1/4 c. fat free milk
1 egg
2 Tbsp. molasses
1 Tbsp. canola oil
Heat nonstick griddle over med. heat. In bowl, combine first 6 ingredients. In small bowl, combine next 4 ingredients. Pour wet mixture into dry mixture, stir till just combined. Not to over mix. Pour 1/4 c. of batter onto griddle and cook for 2 min. or till bubbles appear. Flip and repeat. Serve warm. Makes 3 servings.
Treat your family this weekend, day or night! Are you thinking about your Thanksgiving menu yet? I am, sorting through the recipes, wanting to try or at least add something new. Today, I'm thankful for the feast we have everyday compared to so many who have so much less. Times are harder than ever before and getting those ends to meet are tougher to do. Waste not, want not will be enforced in many homes this winter, as many do without alot of what we take for granted. So, I'm grateful for the feast!

These sound ymmy!! I buy a spiced chai tea that smells like liquid gingerbread. What brand is your tea?
ReplyDeleteMy sisters and I still like breakfast for dinner when the weather gets cold. Oatmeal, fried potatoes, scrambled eggs, sausage, scrapple. The only thing we miss is our mother's fried tomatoes. She made them with brown sugar, but they were never overly sweet. That recipe went with her when she passed.

ReplyDeleteWell those pancakes sounds just yummy. I took Colton to the neuro which is a 2 hour drive there & back .... so I had to stop for a Pumpkin Spice Cappachino. Let me tell you, that was one good drink.
You know, we love breakfast for dinner. I remember one year when we actually just had a big Thanksgiving Day breakfast instead of dinner so we could spend more time visiting and sharing. It was wonderful.
We'll be spending Christmas at my mom's where I'll be with my sister and her family. I can hardly wait!
