Baking Begins!


This day is full of sadness, a dear friend, a blog buddy, Marybeth (www.strawberryhillsfarm.blogspot.com) lost her husband yesterday after a long battle. Some of you know Marybeth, she's the sweetheart of blogland, always treating her pals to little surprises in the mail or just a uplifting email. She's one of the first farmgirls I connected with. She's a brave soul, handling life without a working partner and then taking care of him. My heart aches for her and the family, so I bake. Dear sweet Marybeth, my thoughts and prayers are with you and the family, I"m here if you need to talk!
This recipe is a family favorite and I've already made a batch last week and it's been requested for Thanksgiving. It makes 8 mini loaves which are great for gift giving, which I plan to do with this batch! Enjoy!

Pumpkin Chip Bread
2 2/3 c. sugar
2/3 c. canola oil
1 16.oz. can pumpkin
2/3 water
4 eggs
3 1/3 c. flour
2 tsp. baking soda
1 tsp. cinnamon, cloves and nutmeg
2 tsp. vanilla
1/2 tsp. baking powder
1 bag mini chocolate chips
Heat oven to 350. Grease bottoms of mini loaf pans or 2 bread pans. Mix sugar and oil till blended. Stir in pumpkin, water and eggs, mix well. Add dry ingredients including spices then vanilla. Add chocolate chips last. Blend well then pour into pans and bake till toothpick comes out clean, about 30-40 min. for mini loafs, longer for bread loafs. Cool completely before cutting or gift wrapping. Share and enjoy!

    My mom uses a very similar recipe to yours; she makes them into chocolate chip/pumpkin muffins. We gobble them all up the minute they get out of the oven... with a nice glass of cold milk.
