Hamburger Stew
It might reach 40 today but till then, it's windy and raw! It's a good day for stew! The warm weekend spoiled me, I had windows open! So, the plan for today is to keep warm and on days like this I'm reminded of days gone by when my English Mom would make this English dish called hot pot, hamburger stew with a crust on top, like a hamburger potpie only bigger! It not only warms my body but my heart too, keeping her memory alive and cooking!
English Hot Pot aka Hamburger Stew
1 lb. ground beef, lean
1 onion, chopped
Celery to taste, I like alot
6 carrots, chopped
4 potatoes, chopper
2 cans beef broth
herbs of choice
My add ins:
corn, tomatoes, peppers
Simmer all ingredients on low till meat and veggies are cooked through, making sure you don't simmer out the broth, if so, add more till it remains like a soup. A crust ( pie crust ) can be added when done and baked to complete this meal in one pot.
