Tasty Tuesday


                I know, it's Wednesday and I'm a day late, but yesterday just got away from me and before I knew it, it was bed time! I may be a day off but I have another Irish dish for you to try this weekend! I'm planning a traditional Irish dinner, having a few friends over to taste a few of Ireland finest dishes, should be fun!  I found this cookbook, The Complete Irish Pub, it's filled with history and dishes from Ireland and just begs to be sampled. One dish I'll be making is Champ, a mashed potato spotted with greens. Give the recipe a peak!

Champ

8 starchy potato's ( such as russet or Yukon) peeled and cut in chunks
20 scallions with some green tops, chopped
1 1/2 c. milk
1/4 t. white peppercorns
1/4 c. snipped chives
1 t. sea salt
1/2 c. salted butter, melted and hot
Boil potatoes in salted water till done, about 20 min. Drain well and return to pan. While potatoes are cooking, put the chopped scallions in a saucepan with the milk and peppercorns. Simmer 5 min. then drain, reserving the milk and scallions separately.
Mash potatoes  till smooth, stirring in enough of the reserved milk to produce a creamy consistency. Stir in the scallions and chives. Season to taste with sea salt. Transfer the potatoes to a warm serving dish, make a well in the center and pour in the hot, melted butter. Serve.

  6. Ohmygosh... this looks so good to me... so how was it? five stars?!! Bet your friends were soooo tickled to have such a wonderful Irish feast at your house!
