Tasty Tuesday


          I've been in a menu rut of late, but like so many in my cyber circle, we are using Pinterest to it's fullest and trying one new recipe from the big P each week. I began this challenge last night with this corn casserole, and the oven smelled divine as it baked this easy recipe, one that was so good, it's going on my Thanksgiving menu! Thanks Pinterest! Ingredients
  • ½ cup chopped onion
  • ½ cup chopped green pepper (or jalapenos – or both!)
  • 2 eggs
  • 1 can cream corn
  • 1 can regular corn with juice
  • 1 box Jiffy corn muffin mix
  • 1 stick butter
Instructions
  1. Mix all together in a bowl. Pour into a 9 x 9 inch pan. Bake at 350 degrees for 1 hour uncovered.
