Tasty Tuesday


          I've been in a menu rut of late, but like so many in my cyber circle, we are using Pinterest to it's fullest and trying one new recipe from the big P each week. I began this challenge last night with this corn casserole, and the oven smelled divine as it baked this easy recipe, one that was so good, it's going on my Thanksgiving menu! Thanks Pinterest! Enjoy!



Ingredients
  • ½ cup chopped onion
  • ½ cup chopped green pepper (or jalapenos – or both!)
  • 2 eggs
  • 1 can cream corn
  • 1 can regular corn with juice
  • 1 box Jiffy corn muffin mix
  • 1 stick butter
Instructions
  1. Mix all together in a bowl. Pour into a 9 x 9 inch pan. Bake at 350 degrees for 1 hour uncovered.

  5. I would SO split this right down the middle with you Sue! Myguy loves corn and cornbread but he'd freak out over the onion and jalapenos. I might try to make it without and then put half in the pan, and then stirred the veggies in the last of the batter for "my side! I would really want the onion and peppers. It sounds so good. We buy jiffy cornbread mixes every week! I have a six hole muffin tin and they're gigantic. One box makes four muffys. Just right for us cornbread people. :) Okay... we've got the cornbread covered... how bout some recipes with SPAM now? ;)
