Tasty Tuesday


            I was never a fan of rhubarb until I moved to Arkansas and had my first taste of  rhubarb/strawberry pie! Now, it's a annual event and soon to be harvested from my own patch, got 3 in the ground last month! I also love to make rhubarb bread, a tasty loaf that combined with cream cheese or butter, makes for a nice breakfast bread. It's easy to grow and combined with strawberries, makes a wonderful pie for dessert!

Rhubarb Bread

1 c. milk
1 Tbsp. lemon juice
1 tsp. vanilla
1 1/2 c. brown sugar
2/3 c. canola oil
1 egg
2 1/2 c. all purpose flour
1 tsp. salt
1 tsp. baking soda
1 1/2 c. chopped rhubarb
1/2 c. chopped walnuts
1/4 c. brown sugar
1/2  tsp. cinnamon
1 Tbsp. butter, melted
Preheat oven to 325. Lightly grease 2 loaf pans and set aside. In a small bowl, stir together milk, lemon juice, and vanilla: let stand for 10 min. In a large bowl, mix together 1 1/2 c. brown sugar, oil and egg. Combine the flour, salt and baking soda, stir into sugar mixture along with milk mixture till just combined. Fold in rhubarb and nuts. Pour batter into prepared pans. In a small bowl, combine 1/4 c. brown sugar, cinnamon and melted butter, drizzle over unbaked loaves. Bake for about 40 min. or till a toothpick comes out clean.

  1. I've never been a fan of rhubarb either...but, probably in my old age, I would like it. That would be just my luck..to add another fave to my list of foods. Ha!

  2. I have always loved rhubarb. I can remember as a kid being the only one who like it and sat with my Mom eating big bowls together. I never heard of rhubarb bread, though. Would love to try it. I haven't seen it for sale at all. Wonder where I can get some????

  3. You just never hear of rhubarb around here. I don't think I have ever seen it at the grocery store. I'm sure it has been around, but I guess not many folks around here eat it.
    The bread recipe sounds delicious.

  5. I was a kid, in Kansas, the last time I ate rhubarb. I liked it then, it was with strawberries in a pie.

  6. Sue I lovelovelove rhubarb! Rhubarb and strawberry together is a match made in heaven surely!! I have wonderful rhubarb memories... ahhhhh happysigh.
    I've tried to grow it down here several times, but it just whithers up and croaks. Just too hot I guess. I wish they sold it at the grocery store in frozen food like other fruits n berries. So far I haven't found any. If you ever see it offered somewhere... please let me know. I'm copying your recipe down in the hopes I'll find some! xoxo Have a blessed day my friend!
