Tasty Tuesday


               Soup season isn't over yet, and one of my favorites is Chicken Enchilada Soup. Many restaurants serve this and when you find one you really like, google copycat recipes and that will bring up tons of links for many restaurants own recipes, so you can make it at home, anytime!

Chicken Enchilada Soup

1 Tbsp. virgin olive oil
1 lb. chicken breast fillets
1/2 c. diced onion
1 clove garlic, minced
4 c. chicken broth
3 c. water
1 c. enchilada sauce
16 oz. Velveeta cheese
1 tsp. chili powder
1/2 tsp. cumin
Dice up chicken breasts to bite size pieces and saute in olive oil with garlic and onions till done. Add chicken broth and water, simmer on low for 15 min. Add enchilada sauce, Velveeta and spices and bring mixture to a boil. Reduce heat and simmer for 30 min. Serve hot with chips, cheese, sour cream, etc.

     It's a chilly Tuesday here so soup came to mind and nothing beats homemade! I usually make a big pot so we can eat it 2 nights, I love soup for that reason too! Soups on!

 The craft room makeover begins in the morning, I'm really anxious to get this job done, it's the biggest of the 3 but probably will be my favorite and with temps. warming up to 75 by Friday, I can even open up the windows to speed things along!   1. you read my mind I was looking for a recipe for this soup today for supper tomorrow night since I have a drs appt. in the morning. I havent had good chicken enchilada soup in forever yay!!!

  2. I've never tried Chicken Enchilada Soup but I love Chicken Tortilla Soup and I think they sound pretty similar. I am copying your recipe and hope to try it out later this week. TY
