Tasty Tuesday



              I feel like a kid waiting for Santa today, I woke to a cool 60 degrees this morning with even cooler air heading our way, so now, I'm gearing up for fall baking! I've been adding more recipes to my files this week, and when I came across this muffin recipe, I knew I'd be trying it and sharing it soon.

Gingerbread Muffins

1 c. canola oil
1 c. sugar
1 c. molasses
3 eggs
1 c. buttermilk
3 c. all purpose flour
1 t. baking soda
1 1/2 t. ginger
1 t. cinnamon
1/2 t. nutmeg
Preheat oven to 350. Beat oil and sugar till creamy. Add molasses, beat till blended, add eggs and buttermilk till well blended. Combine flour, soda and spices, add to buttermilk mixture, beat well. Spoon into prepared muffins cups and bake for 22 min.. Remove, and cool. Makes 2 1/2 dozen

      Needless to say, I will be baking these for our Sunday School class this weekend. Given the cooler temps., a cup of coffee and some front porch sitting time, these muffins can cure any bad mood, guaranteed!
I'm so happy to see so many of you signing up for my fall apron swap, and since it's been such a hit, YES, a Christmas apron swap will be planned! I love the idea of having a apron for each season, what a treat! You still have till Labor Day to get signed up, it's easy, just leave your name and email addy for your future partner and then you can get sewing! And wouldn't a gingerbread muffin paired with a afternoon of sewing hit the spot right about now? Enjoy!

  4. Cooler weather and baking sounds sooo good!!! We got rain! that was wonderful and the temps are NOT in the 100's yay!! It's a start ...
    So glad you are thinking of a Christmas Apron Swap :) I'm going to miss the Fall one :(

  6. Your gingerbread muffins sound so good and yes, it is similar to my gingerbread layer cake. It is so funny we both posted recipes on gingerbread but I wasn't inspired by the weather. It is still 94 degrees here in Atlanta. And thanks so much for stopping by today.

  7. It's 59 on the weatherbug, as I type...around 7:15. If these temps stick around till next week, I think we'll plan a trip to Historic Saint Charles. I need a spice or two, from the spice store on S. Main.

    The gingerbread muffins sound wonderful.

    I'm not sure if I'll try the turkey sausage for this particular recipe. We have Italian Sausage only a couple or three times a year, so not worried about the fat content. If we had it more often, I might go with the turkey substitue. I wanted to stay true to the magazine recipe, since it was a first time tryout. We are firm believers in good/healthy diets, but have found moderation works great for us, since we both have good numbers. Sticking with a Mediterrean style diet and watching the fats are working pretty well, so far.

    Portion control is a trick we are both working toward, diligently. Hard to do with dishes like the one I prepared Tueday. That's why I don't do these types of meals often.
