Tasty Tuesday
My kids grew up on macaroni and cheese, and Kraft was the only one that would please all 5 kids. But now that they are grown up and gone, hubby and I can treat ourselves to a little upgrade now and then. This version is just one of those treats, a mature mac and cheese that is filling and easy to make. I've only made this once but it's due to grace our dinner table soon.
Italian Macaroni & Cheese
1 8 oz. box elbow macaroni (or you can use any kind of pasta)
1/2 c. italian seasoned bread crumbs, diveded
1 10 oz. block cheddar cheese, shredded
2 c. shredded mozzarella cheese
3/4 c. shredded parmesan cheese
6 lg. eggs, lightly beaten
4 c. milk
dash of pepper
Prepare pasta as directed, set aside. Coat bottom and sides of a 13x9 in. baking dish with cooking spray. Sprinkle 1/4 c. breadcrumbs evenly over bottom of baking dish. Layer 1/3 of pasta, 1/3 of shredded cheeses and 1/3 of breadcrumbs in baking dish. Repeat layers twice, ending with breadcrumbs. Whisk together eggs, milk and seasonings, pour evenly over layered mixture. Bake at 350 for 55-60 mins. or till golden brown. Let stand 10 min. before serving. Enjoy!

Oh!!! I used to love Mac & Cheese BUT... over the years I have become so lactose intolerant. I swear I can just think about cheese..... LOL!!

I too used to fix Kraft's Macaroni and Cheese for my son. Your recipe sounds yummy and easy to prepare. I'll pick up the ingredients on my next shopping trip so I can fix this next week.

This almost sounds like a soufle with the 6 eggs. I enjoy being creative making a mac and cheese, using up left over smoked gouda, sharp cheedar, and maybe some mozzerrela to add some stringyness. what I have found works best is making a beschemel sauce and adding that to the noodles, since the cheese is already melted it has even flavor.
