Blueberry Bread Pudding
Are we recovering from our turkey comas and shopping sprees? I did not brave the crowds this morning, I did pop into Walmart after lunch and it wasn't too bad but I was disappointed in the sales, not as good as previous years? We had a very nice Thanksgiving as I hoped you had too. I experimented yesterday with a dessert, I love to try new recipes as you know, and my hubby loves bread pudding so when I picked up some blueberry crumble bread for toasting, I thought it would make a good bread pudding esp. since I have some blueberries in the freezer, and it sure did! It was a huge hit, so here is my recipe for blueberry bread pudding:
Blueberry Bread Pudding
1 loaf Blueberry crumble bread
1 c. frozen or fresh blueberries
4 eggs
2 c. milk, you may need more
2 c. sugar
2 Tbsp. vanilla
1/2 c. butter
2 tsp. cinnamon
Heat oven to 350. Melt butter in mircowave. In a large bowl, add milk and butter, mix well. Break up whole loaf of blueberry bread into bite size pieces and add to milk mixture. Add remaining ingredients and blend well, adding more milk if it needs it. Mixture should be moist but not too soggy. Transfer to a 9x13 baking dish and bake for 30-40 min. or till toothpick comes out clean. Drizzle icing on top once cooled. Enjoy!
Today's thankful moment is for a Thanksgiving spent with family, all the kids were there expect one with the grandkids in tow! Any time we can get them all together is a blessing, we have 14 total so far.

ReplyDeleteI am glad your family was with you on Thanksgiving. I live in Washington and our family still lives in Texas (parents, aunts, uncles, cousins etc). I do miss the big holiday get togethers. We did have nine at our house yesterday. Sons, daughter in law, her parents, and their sons plus my new grandson. It is feeling more like the holidays again with more people here. Anyway, I am thankful for that. Thanks for sharing the recipe. I have a raisin bread pudding that you make in the crock pot. I will try it soon. If it is good I will post it.
