Holiday Cooking


Now that fall is finally here I'm looking ahead towards the holidays and was so excited to find a new blog (overwhelmedwithjoy.blogspot.com) and a holiday recipe collection that you too can join in on. Check out the blog to get all the info., sign up and find out how you can post your own favorite holiday recipe. My choice is a family favorite and was even published in the latest Gooseberry Patch Christmas cookbook, it's easy, saves well for toting or gift giving and if you love eggnog you will love this fudge! Enjoy!

Eggnog Fudge
3 cups sugar
1 cup eggnog
1 1/2 cups mini marshmallows
1/2 t. cinnamom
1/2 t. nutmeg
2 Tbsp. butter
6 oz. package white chocolate chips
1 cup slivered almonds
Combine sugar and eggnog in a large saucepan. Bring to a rolling boil over med. heat, stirring constantly. Boil for 2 min. Fold in marshmallows, cinnamon and nutmeg. Bring back to a boil, cook for 6 mins. stirring. Remove from heat, stir in butter, chocolate chips and almonds. Stir well to mix. Pour into a greased 9x9 baking pan. Cool completely at room temperature. Cut into squares. Makes about 5 dozen.

  1. Doesn't this sound good!! Now that the weather has turned colder, it doesn't seem too early to look for new holiday recipes. I'm enjoying your blog -- sure wish that sweet little house could be yours. It seems too good to pass by. . . . but certainly we have to make wise decisions. But the heart tugs. . . .
