Cadbury Cream Eggs

Can you believe it's the last day of March already? Easter is next Sunday, are you ready? I'm not, still picking up little goodies for the baskets, thinking about the menu and such. While doing some research, I found this tasty recipe for the real Cadbury cream eggs and thought I'd share it with you today, and to remind you all that today is the last day to sign up for my thirft store swap. I'll be posting the partners tomorrow with the guidelines and date to ship. This should be a fun swap and a real good excuse to hit the thirft stores! So, enjoy your Saturday and this recipe, just imagine the looks on those sweet little faces when you give them a homemade chocolate egg, yummy!

Cadbury Cream Eggs

1/2 cup light corn syrup

1/4 cup butter

1 tsp. vanilla

1/4 tsp. salt

3 cups powdered sugar, sifted

4 drops yellow food coloring

2 drops red food coloring

1 12oz. bag milk chocolate chips

2 tsp. vegetable oil

Combine corn syrup, butter, vanilla and salt in a large bowl. Beat well with electric mixer till smooth. Add powdered sugar, a little at a time and mix by hand after each addition. Mix till creamy. Remove about 1/3 of the sugar mixture and place in a small bowl. Add the food coloring and mix well. Cover both mixtures and chill for at least 2 hours or till firm. When mixtures are still firm, roll a small marble size from the orange filling. Wrap a small amount of the white filling around the orange. Form into the shape of eggs and place on a lightly greased cookie sheet. Repeat till done and chill at least 4 hours. You want them to set. Combine the chocolate chips and oil in a glass bowl and microwave till melted, mix well. Take each egg filling and dip into melted chocolate, return to cookie sheet. Repeat and chill again for 2 hours. Repeat the dipping process, chill again and your done. Enjoy!!

    You make your own eggs? Wow what an eggstravgansa... my girlfriends already think I am cracked with making my own peeps... I wonder how they will turn out if I sub honey for the powdered sugar... I'll let you know.
