Pumpkin Pleasers
Pumpkin Butter
1 (29 oz.) can pumpkin puree
3/4 c. apple juice
2 tsp. ginger
1/2 tsp. cloves
1 1/2 c. sugar
2 tsp. cinnamon
1 tsp. nutmeg
Combine pumpkin puree, apple juice, sugar and spices in large saucepan. Stir well. Bring to a boil, reduce heat and simmer for 30 min. till thick, stirring often.
Pumpkin Pancakes
2 c. all purpose flour
3 Tbsp. brown sugar
2 tsp. baking soda
1 tsp. baking powder
1 tsp. allspice, cinnamon
1/2 tsp. ginger, salt
1 1/2 c. milk
1 c. pumpkin puree
1 egg
2 Tbsp. canola oil
2 tsp. vinegar
In a separate bowl, mix together milk, pumpkin, egg, oil and vinegar. Combine all dry ingredients. Stir into pumpkin mixture just enough to combine. Heat griddle or fry pan and over med. heat pour batter, brown on both sides and serve hot with butter.
Nothing pleases a fall fan more than pumpkin goodies and I've dug out a couple of my favorites, almost forgot I had them! So treat your loved ones with a hearty breakfast of pumpkin pancakes, yummy! And for another breakfast treat as well as gifting your favorite friends, pumpkin butter. This can also be made in the crockpot if your short on time or just want to make it easy on yourself. This spread is sooo good on toast or muffins. Cozy up in the kitchen this week and join me in making more pumpkin pleasers!
