Now, if you made my Christmas jam I hope you grabbed extra bags of berries for my traditional Christmas pie, a family favorite of ours! Rich in taste yet so simple and good and if you want to get fancy with it, ice it with a thin layer of cream cheese frosting, a trick of mine when I want a pie to really stand out! Just scoop out a few tablespoons of cream cheese frosting from a store bought tub and microwave it till it's thin enough to drizzle over the pie and stand back! Melts in your mouth! Especially good on apple pies!
Christmas Pie aka: Cranberry Pie
Pastry for a 2 crust pie
3 c. fresh cranberries
2 Tbsp. flour
2 c. sugar
1/4 t. salt
2/3 c. boiling water
1 c. raisins
2 tsp. grated lemon peel
2 Tbsp. butter
Remove stems from berries and wash well. Combine flour, sugar and salt in saucepan. Stir in cranberries, water, raisins and lemon peel. Cover and cook till berries pop. Remove from heat and add butter. Cool to lukewarm. Pour filling into pastry lined 9" pie pan, top with crust or lattice strips. Bake in a 425 oven for 40 -50 min. or till juices bubble and crust is brown.

Well if there is ever a great time to over-do with the decorations it has to be Christmas.
I have amazing memories of my Grandparents home during Christmas.
She had no limits, and I adored it all!
