Tasty Tuesday
As you know, we are a brownie bunch, probably our favorite dessert! And I've made many kind but never did I think a brownie would be half way healthy, till now! I pick 2 of my grand kids up from school twice a week, they look forward to a snack when we get back to the house, so I've been trying to come up with some "good" treats and home made as much as possible. Pinterest to the rescue again, I found these brownies, made with black beans, so of course I had to try them! We loved them and the kids didn't know the secret ingredient was healthy! A keeper and oh so fudgy!
Black Bean Brownies
1 19oz can black beans, well rinsed and drained
3 large eggs
3 tbsp vegetable or canola oil
1/4 cup cocoa powder
2/3 cup white sugar
1 tsp baking powder
1/4 tsp salt
1 tsp pure vanilla extract
1 tsp instant espresso
1/4 cup bittersweet chocolate chips
Rinse and drain the beans well. Add all ingredients except the chocolate chips to a blender or food processer and blend till smooth. Pour into a prepared 8 in. baking pan coated with cooking spray, smooth out evenly and sprinkle chocolate chips and bake for 30-32 min. in a 350 oven.

Such a wonderful and "sneaky" idea to get those healthy foods mixed in. My oldest son refuses to eat anything bean related, so this just might be the trick.

Chicky this is a crazy recipe! beans in the brownies? When I first read brownies I was thinking ... man she's speakin my peoples language! But beans in the brownies? lol So you kept it to yourself what the secret ingredient was and the kidlets loved them? grin. Well nothin like some protein in our sweets right?! They look scrumptious!
