I told you I was in pre-fall mode here, and this recipe backs me up! We love breakfast for dinner, it's alot easier to cook breakfast when your wide awake! I found this recipe on Pinterest, doesn't it look wonderful! You might want to stock up on canned pumpkin NOW!
Pumpkin Pie French Toast
2 eggs
1/4 cup milk
1/4 cup pumpkin
1 teaspoon pumpkin pie spice
1/2 teaspoon cinnamon
2 tablespoons brown sugar
8 slices bread (I used a nice, hearty wheat bread)
Beat eggs and milk in a shallow bowl. Stir in pumpkin, brown sugar, and spices until well combined. Make sure there are no clumps of pumpkin left.
Spray griddle with non stick spray. Dip bread into egg mixture, turning to coat each side, and allowing excess to drip off back into bowl. Cook over medium-low heat, about 2 minutes for each side of bread. Serve with syrup.

Oh My Goodness....I am stocking up on pumpkin right now...This looks absolutely delicious. I have been craving pumpkin...and how easy this is. :)

Thank you Elise! Yeah, I used to read those rag mags more for fun and they were hand me downs, but after Princess Diana died, from being chased by those photographers, I took a stand, and I haven't picked one up since! In her honor....
