Tasty Tuesday



            Happy to report our heat wave has lifted and we got some sweet rain, finally!!! I swear the grass is smiling, I know I am!!!  Were picking watermelons this week but there's not a whole lot you can do with them aside from just plain eating them so my thoughts are looking forward to peach season!  They could be pricey this year due to the heat wave but this recipe I"m sharing is cheap to make so treat yourself, keep this recipe handy!

Vanilla Bean Peach Butter

3 3/4 lbs. peaches ( about 7 large)
1/2 c. sugar
1/2 c. honey
1/4  c. fresh lemon juice
1 vanilla bean
Blanch whole peaches in large pot for about 60 seconds. Peel and slice peaches, putting them in large pot, discard pits. Simmer over med. heat for about 20 min., stirring. Puree peaches in blender or food processor. Return to pot and add sugar, hone, lemon juice and the seeds from the vanilla bean. Bring to a boil over med. heat,simmer till mixture thickens, about 40 min, stirring. Remove from heat and can in sterile jars or keep in fridge.

Note: Don't discard the vanilla bean, use it to make your own homemade vanilla, I have a post with recipe just waiting to be searched!

    Where did you find such cute jars?

    I'm hoping to find vanilla bean at Wal-Mart. I've wanted to make vanilla, but the beans are so expensive and you need so many.

    Maybe you'll have a recipe I can afford.

    By the way, I love that F word!

  5. Now this was a good day for me to stop by. The peach butter sounds delicious. Fresh, delicious peaches don`t exist here but I`m going to save the recipe anyway.
