So I went with the recipe that only took 2 hours but your right, it can be made alot faster or in a crockpot too! I ca...I've been doing this for years and years. I call it "apple essence" and I drizzle 2 T. over my apple pies before I put the top crust on. No one can figure out why my apple pies are soooo good - I told them I have a secret ingredient and if I told them, I'd have to kill them :-) Also, I've found it keeps in the fridge almost indefinitely! I also found that it really doesn't seem to matter whether you simmer it for 2 hours, or just cook it at a faster boil - then it's done sooner.
